Special Fruit (Jamaican) Cake

Ingredients
  1. 1 cup LASCO Soft Margarine (250g)
  2. 1 cup Dark sugar (250g)
  3. 3-4 tbsp LASCO Browning
  4. 3 Whole eggs
  5. 2 cups Flour
  6. 1 cup Bread Crumbs
  7. 1 tsp Cinnamon powder
  8. 1/2 tsp Mixed spice
  9. 3 tsp Baking powder
  10. 1 tsp Vanilla
  11. 2 cups Red wine
  12. 1/4 cup Brandy/white rum
  13. 3 cups Mixed soaked fruits
  14. (raisins, prunes, cherries)
  15. Lime (rind and juice)
Instructions
  1. cream margarine, sugar and browning until fluffy.
  2. Add eggs one at a time and beat well.
  3. Combine all dry ingredients and combine the remaining liquids.
  4. To the creamed mixture, add alternately the dry and liquid ingredients.
  5. Pour into greased lined 12" cake pan.
  6. Bake at 300 degree Fahrenheit for 1 hour.
  7. Cool completely and serve with your favourite brandy or rum butter sauce.

Sorrel Pineapple Glazed Pork Chops and Crunchy Rosemary Slaw

Ingredients
  1. 3 small Pork chops
  2. 3 tbsps LASCO Vinegar
  3. 1 tsp Salt
  4. 1 tsp LASCO Black Pepper
  5. 2 tsps LASCO Garlic Powder
  6. 2 tsps LASCO Pork Seasoning
  7. 1 cup Sorrel jam
  8. 1/2 cup Pineapple juice
  9. 2 tsps Grated ginger
  10. 1 whole Medium onion (sliced)
  11. LASCO Vegetable Oil for greasing
Crunchy Rosemary Slaw
  1. 1 cup Purple cabbage
  2. 1 cup White cabbage
  3. 1 cup Cabbage
  4. 1 cup Apples
  5. 1/2 Purple onion
  6. 1 cup Sweet pepper
  7. 2 tbsps Sugar
  8. 2 tsps LASCO Pork Seasoning
  9. 1/2 cup LASCO Mayonnaise
  10. 2 tbsps Fresh rosemary leaves
Instructions
  1. Clean pork chopc with vinegar. Season with salt, black pepper, garlic powder and pork seasoning. Allow to marinate.
  2. To make glaze, empty sorrel jam in a saucepan on medium heat. Pour in pineapple juice. Whisk until smooth. Add the grated ginger and allow to reduce. Add sliced onions to sauce.
  3. Place pork chops on a lightly oiled non-stick skillet. Allow pork chops to brown on one side for about 5 minutes, then another 5 minutes on the other side. Remove from heat and place in a casserole dish. Brush pork chops with the pineapple sorrel glaze. Cover with foil.
  4. Bake in a pre-heated pan for 15 minutes at 350 degrees Fahrenheit. Turn pork chops over, brush once more with the glaze and bake for another 15 minutes. Remove the chops from the oven. Insert a meat thermometer into the meat. When done, it should read an internal temperature of 160 degrees Fahrenheit or when cut with a knife the juices should run clear.
Crunchy Rosemary Slaw
  1. Combine all ingredients (except rosemary) in a large bowl. Toss in rosemary leaves. Chill in refrigerator.
  2. Serve with Sorrel Pineapple Glazed Pork Chops.

  2. 2 cups Party ice
  3. ½ cup Clear syrup
  4. 1 cup Rum cream
  5. ¼ Cup White overproof rum
  6. 1 Tsp Chocolate Syrup to decorate
  7. ½ Tsp Cinnamon or nutmeg powder to decorate
  8. Whipped cream to decorate
Instructions
  1. Combine all ingredients in a blender. Blend until smooth.
  2. Pour into glasses decorated with chocolate syrup.
  3. Add whipped cream and sprinkle cinnamon or nutmeg for a festive appeal.

  1. 2 cups LASCO Vanilla Food Drink; mixed
  2. 2 tsp Salt
  3. 2 tsp Nutmeg
  4. 1 tsp Cinnamon
  5. 1 tsp All spice
  6. 4 large Eggs
  7. ½ cup Granulated sugar
  8. 1 tbsp Brandy
  9. 2 tbsp LASCO Margarine (to grease ramekins)
  10. 1 small Nutmeg, grated
Instructions
  1. 2 cups LASCO Vanilla Food Drink (mixed)
  2. 2 tsp Salt
  3. 2 tsp Nutmeg
  4. 1 tsp Cinnamon
  5. 1 tsp All-spice
  6. 4 large Eggs
  7. ½ cup Granulated sugar
  8. 1 tbsp Brandy
  9. 2 tbsp LASCO Margarine (to grease ramekins)
  10. 1 small Nutmeg (grated)
Notes
  1. Heat Vanilla Food Drink on stove top (Do not boil).
  2. Add the salt, 1 tsp nutmeg, cinnamon, and all spice to the LASCO Food Drink.
  3. In a large bowl, whisk the eggs. Add the sugar gradually to the egg mixture and beat. Slowly add the warm spiced LASCO Food Drink and mix. Add brandy and stir.
  4. Pour through a strainer into an oven-proof bowl into 6 individually greased oven-proof ramekins.
  5. Sprinkle a bit of nutmeg on each custard.
  6. Place custard (already in ramekin or bowl) into a “Bain-marie” (water bath with hot water almost ¾ to the rim of the custard bowl) and place into a pre-heated oven at 320o F for about 35 minutes or until a toothpick is inserted into the custard and comes out clean.
  7. Allow the custard to set for a few hours or chill in the refrigerator.
