Corn and Oats Porridge

A quick and easy Jamaican favourite with a twist that can be enjoyed by both the leisure drinker and the porridge lover
Ingredients
- 1 can LASCO Sweet Corn
- 1 sachet LASCO Oats Porridge (Plain flavour)
- ½ tsp Salt
- ½ sachet LASCO Coconut Cream Powder
- 2 cups Water
- ½ cup LASCO Food Drink (Vanilla Flavour)
- 1 tsp Nutmeg (grated)
- Sugar to taste
Instructions
- Empty corn (with liquid) in a medium sized heavy pot. Add 1 cup water and bring to a boil.
- Empty porridge into a bowl. Add enough water to dissolve and stir into corn mixture. Allow to boil then reduce flame.
- Dissolve coconut powder in a quarter cup of water then add to boiled mixture.
- Allow to cook for 7 to 10 minutes, stirring occasionally. Reduce flame.
- Mix Vanilla LASCO Food Drink with enough water to form a creamy consistency. Stir into porridge mixture then sprinkle on nutmeg.
- Add sugar if required.

Chocolate Pancakes with Orange Rum Sauce

Chocolate and pancakes make an absolute treat! The LASCO Chocolate Food Drink and our Instant Chocolate with Nutmeg Powder adds the perfect double chocolate kick, topped with the zest of citrus.
Ingredients
- 1 cup Flour
- 1 ½ tbsp Baking powder
- ½ tsp Salt
- ½ cup Sugar
- ½ cup LASCO Chocolate Food Drink
- 1 tsp LASCO Soft Margarine
- 1 Egg
- 4 tsps LASCO Instant Chocolate with Nutmeg Powder
Orange Sauce
- ______________
- 1 cup Orange Juice
- 1 tsp Orange Zest
- 1 tbsp White rum
- 2 tbsp Granulated sugar
- 1 tsp LASCO Soft Margarine
- 1 Whole Orange, peeled with no rind and cut into slices
For the pancakes
- Combine all dry ingredients in a bowl.
- Beat the egg to a fluffy consistency.
- Add the egg, melted butter and milk to the dry ingredients and fold in until all ingredients are combined.
- Put aside for about 15 minutes. (This allows the air to be incorporated and makes the mixture fluffy).
- Coat a griddle with non-stick cooking spray or LASCO Soft Margarine.
- Pour a large spoon full of mixture on the griddle ( about 3 tbsp of batter) after about a minute turn pancake over for another 1 ½ to 2 minutes.
- Continue process until all batter is finished.
For the orange sauce
- Mix all ingredients in a sauce pan except the orange slices.
- Allow to simmer on medium flame. Continue to stir.
- Once the sauce becomes thick, reduce flame and add orange slices.
- Allow to cool. To serve, pour orange sauce over pancakes.

Mackerel Fritters (Stamp N' Go)

An authentic Jamaican recipe, often prepared as a filling part of a breakfast and also used as an appetiser.
Ingredients
- 1 can LASCO Mackerel in Brine (drained)
- 1 medium Onion (finely chopped)
- 3 stalks Escallion (finely chopped)
- 2 tbsps LASCO Crushed Pepper sauce
- 3 tbsps LASCO vinegar
- 1 cup Flour
- ½ cup Water (for mixing)
Instructions
- Empty LASCO Mackerel in a bowl. Flake with a fork.
- Add onions, scallion, crushed pepper and vinegar.
- Fold in Flour and gradually add water
- Drop by tablespoons in heated oil
- Garnish with chopped escallion and serve

Sausage Bean Pineapple

A scrumptious sausage bean breakfast dish with an added zing of pineapple, that is sure to get your morning going.
Ingredients
- 1 tbsp LASCO Soft Margarine
- 1 small Onion (chopped)
- 1 small Green sweet pepper (chopped)
- 2 cans LASCO Vienna Sausage (sliced)
- 1 can LASCO Baked Beans 400g
- 1 tsp LASCO Crushed Pepper sauce
- 3 tbsp LASCO Tomato Ketchup
- 1 tbsp LASCO Gourmet Sauce
- 3 slices LASCO Pineapple Slices (chopped)
Instructions
- Heat LASCO Soft Margarine in a small frying pan.
- Add onion and sweet pepper and sauté for 30 seconds.
- Add LASCO Vienna Sausage, LASCO Baked Beans, LASCO Crushed pepper, LASCO Totato Ketchup and LASCO Gourmet Sausage.
- Add chopped pineapple with about 1/4 cup of pineapple juice.
- Simmer for 2 minutes then serve.

Sweet and Spicy Mackerel and Beans with Cinnamon Toast

Start your morning with this double delight of sweet and spicy mackerel and beans, paired with lightly coated cinnamon toast.
Ingredients
- Sweet and Spicy Mackerel and Beans
- 1 can LASCO Hot and Spicy Mackerel 200g
- 3 tbsps LASCO Tomato Ketchup
- 3 tbsps Brown sugar
- 1tsp LASCO Browning
- 2 tsps LASCO All-Purpose Seasoning
- 2 tsps Cinnamon
- 1 tsp LASCO Hot Pepper Sauce
- 1 can LASCO Butter Beans (drained)
Cinnamon Toast
- 2 tsps Cinnamon
- 3 tbsps Sugar
- 4 tsps LASCO Soft Margarine
- 4 slices Hard dough bread
Instructions
- Add mackerel to a saucepan on medium heat. Add ketchup, brown sugar, browning, all -purpose seasoning, cinnamon and hot pepper sauce.
Sweet and Spicy Mackerel and Beans
- Using a heatproof spoon, combine all ingredients together while breaking the mackerel into smaller pieces.
- Add the beans and gently combine with the other ingredients.
- Serve sweet and spicy mackerel and beans with the cinnamon toast.
Cinnamon Toast
- Mix together the cinnamon and sugar. Spread the margarine on the slices of bread and sprinkle the cinnamon and sugar on each.
- Toast slices in a toaster oven.

Sweet Sautéed Corned Beef in Egg Blanket

A distinctly delicious award winning corned beef delight, snuggled in a light and fluffy egg wrap, drizzled with cheese.
SWEET SAUTEED CORNED BEEF
- 2 tbsps LASCO Vegetable Oil
- 1/4 cup Sweet peppers (finely diced)
- 1/4 cup Onions (finely diced)
- 1 sprig Thyme
- 2 stalks Escallion (finely chopped)
- 1/2 cup Grated mozzarella cheese
- 1/2 cup LASCO Pineapple Slices (cut in chunks)
- 1 can LASCO Corned Beef
EGG BLANKET
- 8 large eggs
- Salt and pepper to taste
- Cooking spray
SWEET SAUTEED CORNED BEEF
- Heat oil in a sauté pan and sauté half of the onion, sweet peppers, tomatoes, escallion and thyme until flavours are combined. Stir in corned beef and mix well.
- Add remaining seasonings and pineapple.
- Sprinkle on cheese and use as directed.
- EGG BLANKET
- Beat Eggs until light and fluffy, add salt and pepper. Pour 1/4 of the beaten egg into a pan, then roll to coat the pan.
- As soon as the mixture appears dry and can be lifted, spoon 1/4 of the corned beef mixture into the centre.
- Fold the ends closest to you then the other side, then opposite of the one folded.
- Give a turn over until it is all wrapped around. Remove from pan to plate.
