Vanilla Coffee Custard Recipe

Indulge your cravings with this heavenly custard; sure to tease your palate with a subtle blend of Jamaica Mountain Peak coffee, LASCO Vanilla Food Drink and nutmeg.

Ingredients
  1. 2 cups LASCO Vanilla Food Drink (mixed)
  2. 2 heaped tbsps Jamaica Mountain Peak Coffee
  3. 3 whole Eggs
  4. 1 tsp Grated lime rind
  5. 2 capfuls Rum (coconut or overproof)
  6. 1 tsp Grated nutmeg
Instructions
  1. In a pot, heat about 1/4 cup LASCO Food Drink. Stir in coffee until dissolved. Add the remaining LASCO Food Drink and cool completely.
  2. Beat eggs, then pour into the coffee mixture and stir. Add lime rind and rum. Pour mixture into a greased ovenproof dish or individual custard containers then sprinkle with nutmeg.
  3. Bake at 350 degrees F for 30 minutes or microwave on medium for 12 minutes.
  4. Chill thoroughly then decorate with whipped cream and enjoy!

Bread Pudding with lemon pineapple sauce

Ingredients
  1. 2 cups mixed LASCO Whole Milk or LASCO Vanilla Food Drink
  2. 1 packet LASCO Coconut Cream Powder
  3. ¼ cup LASCO Margarine (melted)
  4. 1 -2 Eggs
  5. 1/2 cup Sugar
  6. ¼ tsp Salt
  7. ¼ cup Rum
  8. 1 tsp each Vanilla and Orange rind
  9. ½ each tsp Nutmeg and cinnamon
  10. 5-6 cups Cubed bread
Lemon Pineapple Sauce
  1. 1 cup LASCO Pineapple slices (chopped)
  2. ¼ cup lemon juice
  3. ¼ water (from pineapple)
  4. 2-3 tbsps Cornstarch
  5. 3 tbsps Rum
Instructions
  1. Heat LASCO Food Drink on very low flame. Add Coconut cream powder and LASCO Margarine.
  2. Beat eggs until slightly mixed, add sugar, salt, flavouring and blend.
  3. Add milk slowly to egg mixture, stirring constantly. Add all remaining spices.
  4. Pour mixture on bread cubes and set aside for 5 minutes.
  5. Pour into a 20.5 cm baking dish. Place in the oven and bake at 180ºC for 45 minutes or until firm.
  6. Allow to cool and serve with sauce.
Lemon Pineapple Sauce
  1. Combine all ingredients, except rum, in a pot. Heat throughly until thickened. Remove from flame, add rum, cool and serve.

Ingredients
  1. 3 heaping tbsp LASCO Instant Chocolate with Nutmeg Flavour
  2. 1 cup Plain flour
  3. 1 tsp Baking powder
  4. 1 Egg
  5. ½ cup LASCO Whole Milk (mixed)
  6. 2 tbsp LASCO Vegetable Oil
  7. 4 heaping tbsp Sugar
Instructions
  1. Preheat the oven to 320 ºF.
  2. Sift all dry ingredients together and put in a bowl. Mix the egg, milk, oil and sugar together.
  3. Pour the egg mixture into the bowl with dry ingredients and mix until combined but still lumpy.
  4. Spoon mixture into greased muffin pan and place in the oven at 320ºF for 20 to 25 minutes or until set and cracked at the top.
  5. Allow to cool for 10 minutes then enjoy.

Coconut Oat Drop Cookies

Ingredients
  1. 2 Cups LASCO Instant Oats
  2. 2 Cups Flour
  3. 1 cup LASCO Margarine
  4. 1 Cup Sugar
  5. 4 tsps Baking powder
  6. ¼ Cup LASCO Coconut Powder
  7. 2 Eggs
  8. ½ Cup LASCO Mixed vanilla food drink
Instructions
  1. Combine Oats and flour. Cut margarine in the mixture and crumble until mixture resembles coarse meal. Stir in sugar and baking powder and coconut powder.
  2. Combine eggs and vanilla food drink. Add gradually and mix until sticky dough is formed.
  3. Drop by heaped table spoons on to a greased cookie sheet.
  4. Bake at 375 degrees Fahrenheit for 10-15 minutes or until golden and firm to the touch.
  5. Cool and serve with any of your favourite LASCO Flavoured Food drink.

Coconut French Vanilla Custard

Ingredients
  1. 2 cups LASCO Whole Milk (mixed)
  2. 1 sachet LASCO French Vanilla Instant Chocolate Mix
  3. 1/2 sachet LASCO Coconut Powder
  4. 3/4 cup Granulated sugar
  5. 6 Egg yolks
  6. Coconut Rum to taste
Instructions
  1. Combine milk, French Vanilla and coconut powder, then place on a low flame and simmer until all ingredients are combined.
  2. Mix together egg yolks and granulated sugar until fully combined.
  3. Pour in milk mixture, slowly stirring constantly.
  4. Pour mixture into a greased ovenproof dish or an equivalent container.
  5. Place the ovenproof dish in a bigger oven safe container and pour water into the outer container, until it is approximately half filled.
  6. Bake at 350 degrees F for 30-40 minutes or until the custard is set.
  7. Once cooled, pour coconut rum over the top of the set custard and chill for at least 2 hours.
  8. Serve well chilled

Ingredients
  1. 1 cup LASCO Soft Margarine (melted)
  2. 3 large Eggs (beaten)
  3. 1 ¼ cup LASCO Food Drink Chocolate Flavour (powder)*
  4. ¾ cup Icing sugar
  5. 1 tbsp Vanilla extract
  6. 1 ¼ cups Flour
  7. 3 tsps Baking powder
  8. 1 tsp Salt
  9. 2 tbsp LASCO Browning
  10. 3 - 4 Cherries (cut in quarters)
Instructions
  1. Beat the eggs, then add vanilla, LASCO Browning and melted LASCO Soft Margarine.
  2. Combine all dry ingredients. Whisk egg mixture and gradually add dry mixture.
  3. Scrape onto a sheet pan and bake for 20 minutes at 350°F. Allow to cool and then cut into squares.
  4. Top with cherries.
Notes
  1. * ¼ cup of LASCO Instant Chocolate with Nutmeg powder may be added for additional sweetness

Pineapple Orange Cupcake with Strawberry Frosting

Ingredients
  1. 4oz LASCO Soft Margarine- softened at room temperature
  2. ½ cup Granulated sugar
  3. 2 Eggs (lightly beaten)
  4. 1 tsp Vanilla extract
  5. 4 oz Self-rising flour
  6. 4 tbsps LASCO Whole Milk (mixed)
  7. 2 tbsps LASCO Pineapple Orange Food Drink Powder
Strawberry Frosting
  1. 5oz Butter (softened)
  2. 10oz Icing sugar
  3. 4 tbsps LASCO Whole Milk (mixed)
  4. 1 tbsp LASCO Strawberry Food Drink powder
  5. 3 - 4 drops Red food colouring
Instructions
  1. Preheat the oven to 350ºF and line a 12-cup muffin tin with paper cases.
  2. Cream the margarine and sugar together in a bowl until pale. Beat in the eggs a little at a time and stir in the vanilla extract.
  3. Fold in the flour using a large metal spoon, adding a little milk until the mixture is of a dropping consistency. Fold in food drink powder. Spoon the mixture into the paper cases until they are half full.
  4. Bake in the oven for 10-15 minutes, or until golden-brown on top and a skewer inserted into one of the cakes comes out clean. Set aside to cool for 10 minutes, then remove from the tin and cool on a wire rack.
Strawberry Frosting
  1. Beat the butter in a large bowl until soft. Add half the icing sugar and beat until smooth.
  2. Mix the remaining icing sugar, milk and the strawberry food drink together, adding more milk if necessary, until the mixture is smooth and creamy.
  3. Add the food colouring and mix until well combined.
  4. Spoon the frosting into a piping bag with a star nozzle and pipe using a spiralling motion onto the cup cakes in a large swirl.

Frosty Cherry Berry Dessert
Perfect for the entire family on a hot day, this LASCO Cherry Berry Food Drink dessert is fun and easy to make. You and the children will love the tease of the Cherry Berry flavour drizzled with chocolate sauce.

Frosty Cherry Berry
  1. 2 cups LASCO Cherry Berry Food Drink (mixed)*
  2. 1/4 cup Lemon flavoured soda
  3. 3 tbsp Cherry flavoured yogurt
  4. 1/4 cup Heavy cream
Chocolate Sauce
  1. 1/4 cup Heavy cream
  2. 1 cup Chocolate chips
FROSTY CHERRY BERRY
  1. Combine all ingredients in a blender. Pour into individual foil or silicone muffin liner.
  2. Freeze for 4-5 hours. To sere, remove frosty from liner and place on plate. Drizzle as much chocolate sauce on it as desired.
CHOCOLATE SAUCE
  1. Heat heavy cream in a sauce pan.
  2. Add chocolate chips and stir, until chocolate is completely melted.
Notes
  1. *For a creamier, smoother dessert use mixed LASCO Whole Milk, instead of water to prepare
  2. LASCO Food Drink.
  3. *If serving to adults, one tbsp of white rum may be added for an extra kick.
